Ingredients

  • 3 eggs
  • 1 tbsp butter
  • 1/4 cup diced bell pepper
  • 1 handful spinach
  • 2 tbsp shredded cheese
  • Salt and pepper to taste

Method

  1. 1Whisk eggs with a pinch of salt and pepper.
  2. 2Melt butter in a nonstick pan over medium heat and soften the pepper for 2 minutes.
  3. 3Add spinach and let it wilt, then pour in the eggs.
  4. 4As the edges set, lift them to let raw egg flow underneath.
  5. 5Scatter cheese over one half, fold, and slide onto a plate.
