Ingredients

  • 2 sweet potatoes, peeled and diced small
  • 4 large eggs
  • 1 red bell pepper, diced
  • 1/2 onion, diced
  • 2 cups spinach
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Method

  1. 1Heat the olive oil in a large skillet over medium heat and add the diced sweet potato. Cook, stirring occasionally, 10–12 minutes until tender and browned.
  2. 2Add the bell pepper, onion and garlic and cook 4–5 minutes until softened.
  3. 3Stir in the smoked paprika and spinach, season with salt and pepper, and cook until the spinach wilts.
  4. 4Make 4 wells in the hash, crack an egg into each, cover, and cook 4–6 minutes until the whites set.
  5. 5Season and serve hot from the pan.
