Ingredients
- 1 cup cooked quinoa, cooled
- 1 cup chopped parsley
- 1 tomato, diced
- 1/2 cucumber, diced
- 2 tbsp olive oil
- 1 lemon, juiced
- Salt and pepper to taste
Method
- 1Combine the cooled quinoa, parsley, tomato and cucumber.
- 2Whisk olive oil, lemon juice, salt and pepper.
- 3Pour over the salad and toss.
- 4Chill 15 minutes to let the flavors meld.
