Ingredients

  • 1 cup cooked quinoa, cooled
  • 1 cup chopped parsley
  • 1 tomato, diced
  • 1/2 cucumber, diced
  • 2 tbsp olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste

Method
