Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 tbsp butter
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup heavy cream
  • 2 cloves garlic
  • Salt and pepper to taste

Method

  1. 1Steam or boil the cauliflower florets until very tender, about 12 minutes.
  2. 2Drain very well, then add to a food processor with the butter, cream and garlic.
  3. 3Blend until smooth, then pulse in the cheddar.
  4. 4Season with salt and pepper and serve hot.
