Ingredients

  • 2 ripe avocados, halved and pitted
  • 4 small eggs
  • 1/4 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped chives to garnish

Method

  1. 1Preheat the oven to 425°F.
  2. 2Scoop out a little avocado so an egg fits in each half, and nestle the halves in a baking dish so they sit level.
  3. 3Crack an egg into each well and sprinkle with cheddar, salt and pepper.
  4. 4Bake 14–16 minutes, until the whites are set.
  5. 5Garnish with chives and serve.
