Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups grated zucchini
  • 1/3 cup honey
  • 2 large eggs
  • 1/4 cup olive oil
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 cup walnuts, chopped

Method

  1. 1Preheat the oven to 350°F and grease a loaf pan.
  2. 2Squeeze the excess water from the grated zucchini.
  3. 3Whisk the eggs, honey and olive oil, then stir in the zucchini.
  4. 4Fold in the flour, cinnamon and baking soda, then the walnuts.
  5. 5Pour into the pan and bake 45–50 minutes, until a tester comes out clean.
