Ingredients
- 1 1/2 cups whole wheat flour
- 1 1/2 cups grated zucchini
- 1/3 cup honey
- 2 large eggs
- 1/4 cup olive oil
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/2 cup walnuts, chopped
Method
- 1Preheat the oven to 350°F and grease a loaf pan.
- 2Squeeze the excess water from the grated zucchini.
- 3Whisk the eggs, honey and olive oil, then stir in the zucchini.
- 4Fold in the flour, cinnamon and baking soda, then the walnuts.
- 5Pour into the pan and bake 45–50 minutes, until a tester comes out clean.
