Ingredients

  • 3 ripe bananas, mashed
  • 3 eggs
  • 2 1/2 cups almond flour
  • 1/4 cup maple syrup
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 cup melted butter or coconut oil

Method

  1. 1Heat the oven to 350°F and line a loaf pan.
  2. 2Whisk the bananas, eggs, syrup and melted butter.
  3. 3Stir in almond flour, baking soda and cinnamon until just combined.
  4. 4Pour into the pan and smooth the top.
  5. 5Bake 45–50 minutes until a skewer comes out clean.
  6. 6Cool in the pan 15 minutes before turning out.
