Ingredients
- 3 ripe bananas, mashed
- 3 eggs
- 2 1/2 cups almond flour
- 1/4 cup maple syrup
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 cup melted butter or coconut oil
Method
- 1Heat the oven to 350°F and line a loaf pan.
- 2Whisk the bananas, eggs, syrup and melted butter.
- 3Stir in almond flour, baking soda and cinnamon until just combined.
- 4Pour into the pan and smooth the top.
- 5Bake 45–50 minutes until a skewer comes out clean.
- 6Cool in the pan 15 minutes before turning out.
