Ingredients

  • 2 sweet potatoes, cubed
  • 1 can black beans, drained
  • 6 corn tortillas
  • 1 avocado, sliced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 lime
  • Salt and pepper to taste

Method

  1. 1Preheat the oven to 425°F. Toss the sweet potato with olive oil, cumin, paprika, salt and pepper, and roast 20–25 minutes.

  3. 3Heat the tortillas.
