Ingredients
- 2 sweet potatoes, cubed
- 1 can black beans, drained
- 6 corn tortillas
- 1 avocado, sliced
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 lime
- Salt and pepper to taste
Method
- 1Preheat the oven to 425°F. Toss the sweet potato with olive oil, cumin, paprika, salt and pepper, and roast 20–25 minutes.
- 2Warm the black beans in a small pan.
- 3Heat the tortillas.
- 4Fill with sweet potato, black beans and avocado, and finish with a squeeze of lime.
