Ingredients
- 2 chicken breasts
- 1 cup cooked brown rice
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/3 cup feta cheese, crumbled
- 1/4 cup tzatziki
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
Method
- 1Season the chicken with oregano, salt, pepper and olive oil.
- 2Grill or pan-sear 5–6 minutes per side until cooked through, then slice.
- 3Divide the brown rice between bowls and top with chicken, cucumber, tomatoes and feta.
- 4Finish with a spoon of tzatziki.
