Ingredients
- 2 cans chickpeas, drained
- 1 can coconut milk
- 1 can diced tomatoes
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tbsp curry powder
- 2 handfuls spinach
- Cooked rice, to serve
Method
- 1Sauté the onion in oil until soft, then add garlic and curry powder.
- 2Stir in tomatoes and simmer 5 minutes.
- 3Add chickpeas and coconut milk; simmer 15 minutes.
- 4Fold in spinach until wilted and season to taste.
- 5Serve over rice.
