Ingredients

  • 2 cans chickpeas, drained
  • 1 can coconut milk
  • 1 can diced tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp curry powder
  • 2 handfuls spinach
  • Cooked rice, to serve

Method

  1. 1Sauté the onion in oil until soft, then add garlic and curry powder.
