Ingredients
- 1 1/2 cups whole wheat flour
- 1 cup rolled oats
- 1/2 cup Greek yogurt
- 1/3 cup honey
- 2 large eggs
- 1/3 cup milk
- 2 tbsp olive oil
- 1 tsp baking soda
- 1 cup blueberries
Method
- 1Preheat the oven to 375°F and line a 12-cup muffin tin.
- 2Whisk the flour, oats and baking soda in a bowl.
- 3In another bowl mix the yogurt, honey, eggs, milk and olive oil.
- 4Fold the wet into the dry, then gently fold in the blueberries.
- 5Divide between the cups and bake 20–22 minutes, until golden.
